This is our First Release of Rum, it is sweet, fruity and full of body. We only have two Casks laid down and no intention to make Rum again. This is a hand made, hand bottled and hand labeled with a hand. Delicious with a long finish.
Each bottle has been individualized by the 11 people who have helped make Adams possible. Big Adam, Little Adam, Claire, Ellie, Harper, Anne, Berni, Pam, Dave, Laurie and Katie.

The Story Of Our Rum...
In 2014, Adam & Adam had a Dream to build a Distillery. In 2016 this dream became a reality; Adam & Adam rented a small yard & building on Glen Ireh Farm. Roll on 2017, Adam had a great idea, “Let’s make some rum” he said. So, they ordered some Bundaberg Molasses and set about learning how to make Rum.
In early August of 2017, in the original distillery the Adams made their first and only batch of Pot Distilled Rum. Using direct fired gas stills of their own design and built in Tasmania by Stillsmiths (Kolmark), 220 litres of heavily goodness flowed forth.
The New Rum was placed into two casks, a 200-litre bourbon cask & a 20 litre bourbon cask. The 200-litre cask still has many years to go before maturity, however, the other 20 litres has had quite the journey to get into your bottle.
After spending 2 years in the bourbon cask Adam noticed the rum was missing something; some sweetness & depth of character. Looking around the bond store a crazy idea formed. Recently Adams Distillery had made another unusual project, barrel aged Sloe Gin. This was aged in a “Pipe” style 20 litre Pinot Noir cask made by Transwood Cooperage. The strong Port Wine characteristics of the Sloe Gin had now been imparted into the Pinot cask. “I wonder…” thought Adam. “What the heck” said the other Adam & they transferred the 20 litres of Rum into the Sloe Gin aged Pinot cask & put it to rest.
Fast forward 12 months. WOW, what a difference. This Rum has developed beautiful sweet plum and dark fruit flavours. It is sweet and chewy with a perfect balance of mouth fell & a medium to long finish. At 48% ABV, this Rum has hit the sweet spot of flavour & alcohol. An extremely limited and rare expression, only 33 bottles in total, never to be reproduced in this fashion again.
Why the Handprint?
The idea for the handprint was to emphasise the hand-crafted nature of what we do at the distillery and what the Schmedier’s do at Transwood Cooperage. Everyone who has laid their hands on these bottles are members of The Adams Family.
